Ingredients
1 12-14 oz Prime NY Striploin
1 tbsp shallots, thinly sliced
2 garlic cloves, smashed
2 sprigs fresh thyme
2 tbsp butter
2 tbsp oil
Instructions
- Give your steak five to ten minutes at room temperature to ensure you’re not working with a chilly piece of meat.
- Heat your cast iron pan over medium-high heat for three minutes.
- Season your steak with a generous sprinkle of kosher salt and some freshly ground black pepper.
- Add a touch of oil to the pan. Place the steak in the pan, —away from you to avoid any unexpected oil splatters. Gently press the steak down to ensure it hugs the pan for an even sear.
- After about three minutes, when it starts a crust forming on one side, flip it over. Cook it for an additional two minutes on the other side.
- Lower the heat to medium-low.
- Toss in the thinly sliced shallots, smashed garlic cloves, thyme sprigs and butter. Baste your steak for about three minutes.
- Let the steak rest on a plate for a well-deserved four to five minutes allowing the steak to keep all its natural juices and flavors locked in.
